What's for Dinner? Honey BBQ Chicken and Twice Baked Potatoes.

One thing I love to do is spend time with my husband in the kitchen. We love cooking together. A recipe that my husband loves me to make is Twice Baked Potatoes. So last night we mixed it with some yummy honey BBQ chicken.


To Start, I gather 4 large cleaned russet potatoes and place them in the oven on 425 for thirty minutes. I then pierce each of them with a fork and put back in the oven for another thirty minutes.
 In a bowl prepare 2 to 3 tablespoons of butter and sour cream. season with salt and pepper.
When you can pierce your potato with the fork and it slide in smoothly then your potatoes are ready to be removed from the oven. Next you will hold the potatoes with a oven mit ant cut a oval circle creating a bowl and lid like pictured below.
Scoop out the potato from the lid and bowl of the potato into the bowl of butter and sour cream. Throw the lids away or save them to make your own potato skins. With a fork mash the potatoes and mixture together till well mixed.
 
Scoop your mixture into the potato bowls to fill to your desire. Top the potato with your favorite toppings like scallions, cheese or bacon.
Reduce the oven down to 350 and put the potatoes back in the oven until the cheese is melted. About 10 minutes.
The Chicken takes about 35 minutes to cook so you want time it just right so they are both finished at the same time. I found some honey BBQ McCormick mix that I am going to use for this recipe. You are going to start with 1/4 cup of honey, 1/4 water and the seasoning packet. Mix well. Then poor over your chick and cook in the oven for about 35-40 minutes or until done.
 Plate your meal with some corn or another vegetable and you have yourself a Delicious meal!
